Three cheeses. One comforting bake.

Gruyère brings a rich, nutty depth; sharp white cheddar adds a bright tang; and Colby Jack melts smoothly to tie the sauce together. Bourbon lends subtle warmth, with caramel and oak notes that complement the cheese rather than overpower it. A buttery cayenne panko crust adds just enough heat and crunch to balance every creamy bite.

Ingredients

Pasta

  • 1 lb elbow macaroni or cavatappi
  • Salt for pasta water

Three-cheese sauce

  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk, warmed
  • 1 cup heavy cream
  • 1/4 cup bourbon whiskey
  • 2 cups freshly shredded Gruyère
  • 2 cups freshly shredded sharp white cheddar
  • 1 1/2 cups freshly shredded Colby Jack
  • 1 tsp Dijon mustard
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne
  • Salt to taste

Buttery panko topping

  • 1 1/2 cups panko
  • 4 tbsp unsalted butter, melted
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne
  • 1/4 tsp smoked paprika
  • 1/4 cup Parmesan (optional)
  • 1 tbsp parsley (optional)

Directions

  1. Prepare the oven and pasta

Preheat the oven to 375°F. Butter a 9 × 13-inch baking dish. Boil the pasta in salted water until 2 minutes shy of the package directions, then drain.

  2. Build a creamy sauce

Melt the 4 tablespoons of sauce butter over medium heat. Whisk in the flour and cook for 2 minutes. Gradually whisk in the warmed milk and heavy cream. Cook, whisking, until thickened, 4–6 minutes.

  3. Add the bourbon and cheese

Add the bourbon and gently simmer for 2–3 minutes. Lower the heat and gradually melt in the Gruyère, white cheddar, and Colby Jack without boiling. Stir in the Dijon, garlic powder, smoked paprika, onion powder, black pepper, cayenne, and salt to taste.

  4. Combine and top

Mix the sauce with the drained pasta and transfer to the buttered dish. Toss the panko with the melted topping butter, garlic powder, cayenne, smoked paprika, and optional Parmesan. For extra crunch, optionally toast the mixture in a skillet for 2–3 minutes. Spread evenly over the pasta.

  5. Bake until golden

Bake uncovered for 20–25 minutes, until bubbling and golden. If needed, broil for 30–60 seconds, watching closely so the topping does not burn.

  6. Rest and serve

Rest for 5–10 minutes before serving. Finish with the optional parsley.

Make ahead & leftovers

For make-ahead preparation, keep the panko topping separate until baking and refrigerate the assembled pasta. A chilled dish may need additional time in the oven. Refrigerate leftovers promptly and enjoy within 3–4 days. Reheat to an internal temperature of 165°F with a splash of milk to restore the creamy texture.

A few kitchen tips

  • Shred your own cheese. Freshly shredded cheese melts more evenly than pre-shredded cheese with anti-caking coatings.
  • Keep the heat gentle. Avoid boiling the sauce once the cheese goes in to keep it silky, not grainy.
  • Bake just until ready. Don’t overbake: stop when the edges bubble and the top is golden to keep the center creamy.
  • Reach for panko. Its airy flakes make a crisp topping that contrasts beautifully with the rich sauce.

What to serve alongside

Set a dish on the table beside brisket, blackened chicken, ribeye, or ribs. For a vegetable contrast, pair it with Brussels sprouts or collard greens—their hearty, earthy flavors stand up to the creamy cheese sauce.
